Rosemary Pork Tenderloin


Hello! Today I have decided to cook a delicious meal of Rosemary Pork Tenderloin with a side of broccoli. This dish is a family favorite in my household, and very healthy too. My mother was not in a mood to cook dinner so I volunteered to make some pork tenderloin. I bet your families will love this dish too, so the recipe will be included.


Get together all of the ingredients. It may seem like a lot of things, but most of these items you will commonly find in your kitchen, such as salt, pepper, garlic or olive oil. Gathering all the ingredients required a minimal amount of shopping, so there is no need to stress about groceries. My mother disliked cooking so much she placed a "Chef Wanted" sign in our kitchen. The sign has been there about two years...we're still hoping for applicants.



Recipe
For this recipe you will need the following items:
  • Garlic
  • fresh rosemary
  • balsamic vinegar
  • olive oil
  • salt
  • pepper
  • currant jelly
  • chicken broth
  • dried cherries
  • cornstarch
First, in a plastic ziplock bag, add 2 teaspoons of garlic, 2 sprigs of rosemary, 1/4 cup balsamic vinegar, 1/2 cup olive oil, 1/4 teaspoon of salt, and 1/4 teaspoon of pepper. Next, mix the ingredients and place the pork tenderloin into the bag. Zip up the bag and then set it aside for now. Let the pork marinate for a while.

While the pork is being marinated, lets make the sauce! Place a pot on the stove and add the following items into the pot.
  • 2 teaspoons of currant jelly
  • 1/2 of chicken broth
  • 2 tablespoons of balsamic vinegar
  • a handful of dried cherries
  • 1/2 teaspoon or cornstarch
Whisk the ingredients for about a minute over medium heat.


After doing so, let's start preparing the broccoli! First get out a microwave steaming pan and place the broccoli in it with water in the bottom. Put some butter on top to add some extra flavor. Heat in the microwave for about 3 minutes.
After the pork has marinated for about 30 minutes, take the pork out of the marinating bag and cook it on a grill on medium heat until the temperature reaches 145 degrees F. Make sure you get it just right so your family will enjoy! After grilling the pork and pouring our sauce over it, serve your dish with a side of broccoli and you are done! Your family will enjoy it. trust me.

Pork Marinade
2 tsp Garlic
2 sprigs fresh rosemary
1/4  cup balsamic vinegar
1/2 cup extra virgin olive oil
1/4 tsp salt
1/4 tsp pepper
1 1/2 pound pork tenderloin

Combine all of the ingredients for the marinade in a 1 gallon ziplock bag.  Mix the ingredients together by gently massaging te bag and add the pork.  Seal bag and set aside for approximately 30 minutes (or more...can marinate over night.)  Grill the pork tenderloin on a medium heat grill until the internal temperture reaches 145 degrees.  (Alternatively, you can bake at 350 degrees for approximately 35 to 40 minutes.)

Sauce
2 TBLS Red Currant jelly
1/2 cup chicken broth
2 TBLS balsamic vinegar
1/3 cup dried cherries or dried cranberries
1 tsp cornstarch

Add all ingredients to a small sauce pan.  Wisk together and then simmer over medium heat for approximately 5 minutes or until it bubbles and thickens slightly.

Pour sauce over cooked pork and serve immediately. Enjoy.
